Salted Caramel Pecan Cookies Recipe (1)

This past weekend, my friend Amy and I got together for a fun girls’ weekend at her family’s housein the mountains. The trees are just beginning to turn, like just barely beginning, not to the all-out glory of vivid hues of yellow, gold and red, but just the very hints of what is to come in just a few short weeks. The air was also just a bit crisper than what I’ve been experiencing at home lately. Even though Amy texted me a couple of times to remember to bring my jacket, what did I forget? My jacket! Thankfully, I had packed a cardigan that I wore the entire weekend. Like, the ENTIRE weekend.

We visited a few of our favorite places for shopping, coffee andbrunch and wore yoga pants and watched marathon episodes of Modern Family while we discussed theworlds’ problems of white jeans after Labor Day, Dunkin Donuts coffee versus Starbucks, and how to prepare in case of an Ebola outbreak. Believe me, we had solutions! Or at least we thought we did at the moment. We also found a little bit of time on Friday to do some cooking and baking together while it was raining. You know, I’d say that’s just what food bloggers do when they get together, but it seems like we’d be doing that whether we were food bloggers or not. Cooking and baking is just our “thing”, I guess!

These salted caramel pecan cookies were definitely one of my favorites that we made. They couldn’t have been any easier either! They are perfect for the fall with the mingling of flavors from the caramel, pecans, and the buttery cookie, but I have a feeling they’ll be happening at my house throughout the year.

We won’t talk about the five pounds I think I gained this weekend. I think it wasbecause of the sweater. Ha!

FAQs

What is the secret to making cookies soft and chewy? ›

Cornstarch helps product soft and thick cookies. Using more brown sugar than white sugar results in a moister, softer cookie. An extra egg yolk increases chewiness. Rolling the cookie dough balls to be tall and lumpy instead of wide and smooth gives the cookies a bakery-style textured thickness.

What makes cookies chewy instead of crispy? ›

The ingredients you use and how you shape your cookies both play an important role in whether your cookies turn out crispy or chewy. The type of flour and sugar you use, if your cookie dough contains eggs, and whether you use melted or softened butter all factor into the crispy-chewy equation, too.

Why are my cookies never chewy? ›

Use Melted Butter

If the goal is a chewy cookie, then you absolutely need to be using melted butter. The technique of creaming softened butter and sugar together is often used for making cakes. And for good reason! The process of creaming incorporates air into the butter which results in a more airy and cakey cookie.

How do you make cookies soft and chewy vs hard and crisp? ›

Different types of sugars affect the texture because they absorb different amounts of water. Remember moisture is the key! White sugar creates crispier cookies and brown sugar creates chewier cookies.

Should I use baking soda or baking powder in cookies? ›

Baking soda is typically used for chewy cookies, while baking powder is generally used for light and airy cookies. Since baking powder is comprised of a number of ingredients (baking soda, cream of tartar, cornstarch, etc.), using it instead of pure baking soda will affect the taste of your cookies.

What ingredient contributes most to the texture of a crisp cookie? ›

Fat is a very important ingredient in cookies – it tenderizes, crisps and browns, adds color and a wonderful flavor that is impossible to duplicate. Butter, our fat of choice, ensures good baking results and adds the most desirable taste, texture and appearance.

Can you over mix cookie dough? ›

Overmixing can result in tough cookies.

How many calories are in Texas Chewie Pecan Praline? ›

Lammes Candies Texas Chewie Pecan Praline (1 piece) contains 16g total carbs, 15g net carbs, 10g fat, 1g protein, and 150 calories.

What determines the moistness of a cookie? ›

Butter contributes milk solids and water to a cookie, both of which soften it. Brown sugar contributes molasses – again, a softener. Using lower-moisture sugar (granulated) and fat (vegetable shortening), plus a longer, slower bake than normal, produces light, crunchy cookies.

What does adding cornstarch to cookies do? ›

1. Cookies. Cornstarch does kind of incredible things to cookies. I mean not only does it give them soft centers, prevents them from spreading, and makes them somewhat thick (in a good way), but it also contributes to the chewiness factor, which, in my opinion, is the most important cookie attribute.
