Restaurant Spectrum

In Amsterdam there are three restaurants with two Michelin stars, one of which is Spectrum. Spectrum is located in the Waldorf Astoria hotel, and you can enjoy a very high level dinner here. Spectrum offers two different, ten-course menus to choose from. The tasting menu and the vegetarian tasting menu. The dishes mainly come from Dutch soil, because according to Spectrum, you don't have to travel far for the most special and beautiful products. With your reservation, you can indicate all kinds of allergies and dietary preferences. One is 'no animal products'. Let Spectrum pamper you for an entire evening, because the entire ten-course menu and the wine arrangement can be served vegan. + More info

In 2021 Dennis Huwaë received his first Michelin star with the 54 m2 restaurant Daalder on the Lindengracht. This year they are moving to a larger location in the Sieraard to offer more people to taste their delicious food. No stiff hassle, as Daalder itelf says, but a dynamic setting to bring people together. Restaurant Flore

Hotel de l'Europe on Nieuwe Doelenstraat in Amsterdam houses Restaurant Flore, a 'Conscious Fine Dining' concept, led by Michelin-star chef Bas van Kranen. Here, high-quality ingredients are transformed into simple but special dishes that change with the seasons. The menu therefore changes constantly, based on the following principle: 'vegetables of the moment', which is why there is no menu available. As a guest, you can choose a lunch menu for 110 euros per person, or a dinner menu for 185 euros per person. All dishes are dairy-free and of course the menus can also be ordered as vegetarian. This is normally possible, but during the PLANT FWD week there are even more options. + More info

Nijmegen (1)

Restaurant De Nieuwe Winkel

At De Nieuwe Winkel everything revolves around plants. It is a restaurant with two Michelin stars for its cuisine and a green star from Michelin for sustainability. Chef Emile van der Staak is concerned with sustainability and the future of the world. Partly for this reason, the kitchen is predominantly plant-based, organic and seasonal. The restaurant is located in a former orphanage that was once to be demolished but has been preserved by activists. De Nieuwe Winkel has been located in the building since June 2019. The menu changes often, that's why we don't have one online. The examples are mostly from old menu's. But what is certain is that you will be surprised by all the flavors. There is a choice between a six- and nine-course menu, and a three-course menu is also possible during the week. Reservations are necessary, and also far in advance: for example, they are completely booked in 2023. Fortunately, there is a reserve list. + More info
